A wonderful way to side step the kneading/proofing/punching down/rising in the room of correct temperature, holding your mouth just so while taking care not to fight with your spouse, etc., is: make “no knead” bread. I have a recipe that Nathalie Dupree (I took a cooking class with her at Serenbe not long ago) adapted from a Mark Bittman recipe. It makes a delicious loaf – recognizable as bread, with a hard crust and soft inside. Will send a copy of the recipe via email or Grandpa McGill.
